
Absolutely one of the greatest lunches I have ever created myself!!
A few notes: be careful with the lime juice - a little goes a long way and don't be afraid to add some jalapenos to the guac or to the meat mixture (just make sure you remove all the seeds if you don't like it really HOT).
This recipe will feed 2-3 people. Can easily be adjusted for alot more!!
INGREDIENTS
1/3 lb lean ground beef
1c. fresh chopped spinach
1 tsp. taco seasoning
1 zucchini, peeled and sliced into thick sticks
1/2 red onion, cut
1/4 red onion, finely chopped
1/2 firm tomato, diced small
2 ripe avocados
fresh cilantro
lettuce, shredded
salt, to taste
1 lime
flour tortilla
salsa
cheddar cheese (if desired)
DIRECTIONSStep 1: Brown the meat on med-hi, adding the taco seasoning while cooking (do not add water). Pour off excess grease and add spinach. (You can add some cilantro with the spinach if you wanna.) Pour mixture onto dish with paper towel to drain.
Step 2: Using the same pan, wipe out excess grease (leave a light coating on the pan). Increase the temp to high and add 1/2 onion and all zucchini, moving the veggies almost constantly. Cook on high until onions and zucchini get slight scorch marks then reduce heat to medium and cook for about 7 minutes. (The onions need to be just past the "crunchy" stage and the zucchini should be slightly translucent.
Step 3: Prepare the guacamole. (This can actually be done ahead of time if you wish.) In a bowl, add 1/4 chopped onion, diced tomato, finely chopped cilantro (about 6-8 sprigs) and blend. Dice avocado and add to mixture, mashing slightly with a fork (avocado should remain chunky). Add salt and lime juice to taste.
Step 4: Assemble the dish. (Divide evenly into 2 or 3 dishes.) In the bottom of a bowl, line with a steamed flour tortilla. Add the meat mixture, then the zucchini and onion. Add a large handful of shredded lettuce and sprinkle with cheese, if desired. Spoon a large scoop of guacamole in the center and top with a spoonful of yummy salsa.
For added pizazz, use some blue corn chips as a colorful garnish.
Can easily be converted to a vegan dish by eliminating the meat and sauteing lots of fresh veggies with the zucchini!!
When you get toward the bottom of the bowl, roll the remaining contents into the flour tortilla and finish like a taco. MMMMMMMmmmmmmmmm.
